A PDF page carries two frames. The first describes the whole sheet as it was produced. The second says which part of that sheet should be shown. Cropping only touches the second: you tighten the display frame, you do not cut the sheet.
So content that falls outside the frame does not disappear. It stops being displayed and printed, but it stays in the file, and restoring the display frame to its original size brings all of it back. Any PDF editor can do that.
This is not a limitation of this tool, it is what cropping means in the format itself. A service promising you otherwise would either be misleading you or doing something other than cropping.
